Pancakes: A Fluffy Delight

It's Pancake time! The stomach jubilates! Even the tongue twirls in excitement!

There’s hardly anyone who doesn’t smile at the sight of pancakes. Soft, golden, and sweet making breakfast feel special. Whether you like them plain, with honey, or topped with fruits, pancakes are that perfect comfort food that fills your belly and brightens your mood.

Pancakes are not just easy to make; they’re versatile and filling. Fortunately , they are also budget friendly. They give you the right energy to start your day, thanks to the carbs from the flour and the protein from the eggs and milk. Plus, that warm, fluffy texture makes every bite feel like a small treat.

INGREDIENTS 

1 cup of flour

2 tablespoons of sugar

1 teaspoon of baking powder

1 cup of milk (liquid or powdered, mixed with water)

1 egg

2 tablespoons of melted butter or vegetable oil

A pinch of salt

½ teaspoon of vanilla essence (optional)

Oil or butter for frying

How to prepare:

1. Mix the dry ingredients: In a bowl, combine flour, sugar, baking powder, and salt. Stir them together evenly.

2. Prepare the wet ingredients: In another bowl, whisk the egg, milk, melted butter, and vanilla essence.

3. Combine both mixtures: Slowly pour the wet mixture into the dry ingredients while stirring gently until you get a smooth, lump-free batter. The batter should be thick but still pourable.

4. Heat the pan: Place a non-stick frying pan on medium heat and add a little butter or oil to grease it lightly.

5. Cook the pancakes: Pour a small amount of batter into the pan (about half a cup). Let it spread out naturally. When bubbles begin to form on the surface and the edges start to look dry, flip the pancake with a spatula. Cook the other side until golden brown.

Repeat the process until all the batter is used up.

As a student, you can stack the pancakes neatly on a plate and drizzle with honey or jam. You can also enjoy them with butter, peanut butter, chocolate spread, or fresh fruits like bananas and strawberries. For a more Nigerian twist, serve your pancakes with fried eggs or hot tea. 

Pancakes are pure joy in edible form. They’re soft, fluffy, and perfect for any mood including lazy mornings, late-night cravings, or quick snacks.
