The plantain is the main deal and it is cooked till it is soft and can easily be broken down Here's a simple recipe to prepare a delicious plantain porridge:
INGREDIENTS
- Depending on the number of people, 2-3 bunches of plantain are needed to be peeled and diced
- 2-3 Scotch bonnet peppers (or scotch bonnet powder), chopped or crushed
- 3 onion, chopped (if you love onions)
- 1 teaspoon ground crayfish (optional)
- Ginger and Garlic (if you have preference for them)
- Salt and pepper to taste
- 2-3 tablespoons palm oil
- 2 cups water or stock
- Optional: fish, meat, or snails for added protein
