Nutritious Bean-Based Dishes

1. Moin Moin

Moin Moin is a traditional Nigerian dish made from peeled and cooked beans.

Ingredients:

- peeled beans

- onion

- Scotch bonnet pepper

-  salt

-  seasoning cube

- tablespoons vegetable oil

- eggs/fish (optional)

Preparation:

Blend the beans, onion, pepper, and salt until smooth.

Add the seasoning cube and mix well.

Pour the mixture into a pot or individual cups.

Steam for 30-40 minutes or until set.

Serve with garri, ogi, or bread.

2. Gbegiri (Bean Stew)

Gbegiri is a popular Yoruba bean stew. Ingredients:

-beans

- 1 onion

- garlic

- Scotch bonnet pepper

- salt

-seasoning cube

- palm oil

Preparation:

Cook the beans until soft.

Blend the cooked beans with onion, garlic, andpepper.

Heat the oil in a pot and add the blended mixture.

Add water and seasoning cube, then simmer until thickened.

Serve with eba or Amala.

3. Akara (Fried Bean Cakes)

- Vegetable oil for frying

Preparation:

Soak the beans overnight and blend with onion and pepper.

Add salt and mix well.

Heat oil in a frying pan.

Using a spoon, drop small amounts of the mixture into the oil.

Fry until golden brown and crispy.

4. Bean Porridge
