Easy to prepare, budget-friendly and good meals for Nigerian University Students

Being a university student and staying without your parents comes with much stress, especially when deciding what to eat every day. As we all know, the festive period is over, and I hope everyone eats enough before resuming school. Returning to school gets many of us students thinking of what we would eat in school before the next break, but I got everyone covered. Below are budget-friendly, healthy and fast meals that won't take much time and allow us to study even while cooking. 


Jollof Rice

It's a common food in every home. For many people, Jollof rice is at least affordable and can be prepared with or without protein, making it adaptable to various budgets.

Ingredients: Rice, tomatoes, onions, pepper, oil, seasoning cubes. With these ingredients, your jollof rice is ready to be served.


Eba and Okro Soup

Ingredients: 

Garri (for Eba)

Okro: palm oil, grounded pepper, stockfish, or meat (optional).

 Okro soup is rich and can be made with or without meat, depending on your budget. Eba (made from Garri) is also less expensive and filling.


Yam porridge (Asaro)

Ingredients: Yam, palm oil, pepper, onions, and seasoning.

Yam porridge is a healthy and economical dish, especially when yam is in season.


Boiled Yam and Egg

Ingredients: Yam, eggs, oil, onions and pepper (optional).

Boiled Yam and egg are a combination that never goes wrong. It's inexpensive and can be served as breakfast or dinner.


Spaghetti with Stew

Ingredients: Spaghetti and salt, oil, pepper, seasoning and protein.

This is a good combination for those that don't like stir fry Spaghetti. It is simple and less expensive. 


Noodles with Vegetables

Ingredients: Instant noodles, carrots, cabbage, onions, bell peppers, eggs (optional).

 Noodles are quick and cheap. Adding veggies makes it healthier without increasing cost.


Bread and tea or egg

With just bread, Chocolate or coffee, and milk, your bread and tea are ready. It's less expensive and nutrition-wise. 


Beans and Plantain 

Ingredients: Beans, ripe or unripe plantains, palm oil, onions, seasoning.

Beans are an excellent source of protein. It is quite affordable. Paired with pl

antains, it makes a nice meal.
