Water Yam Fritters

OJOJO, also known as Water Yam Fritters, is a traditional Nigerian snack or finger food made from grated Water Yam (Isu Ewura). Ojojo can be classed as a meal where/when it is paired with Hot Pap, Garri or Oatmeal. It is incredibly filling and very easy to prepare, the whole process from start to finish should take no more than 45 minutes.
Moving on to its Ingredients for 2 servings, we have:
I tuber of water yam
Scotch bonnets (ata rodo)
2 seasoning cubes
1 onion
1 teaspoon of salt
2 tablespoons of blended Cray fish(optional)
2 liters of vegetable oil
Cooking Instructions:
1. Cut the yam and peel off the back
2. Wash the yam and cut into square pieces
3. Grate the yam with a grater that has small holes
4. Add your Scotch bonnets, onions, salt, seasoning cubes and fish into the mixture
5. Stir together with a spoon
6. Pour your oil into the pan and let it heat up
7. Then cut the mixture into small forms with your hand or spoon
8. Fry till desired form and then it is ready.
You can eat it wit
